This summer has been a blast from beginning to the end! I traveled, cooked, played with Helo, caught up with old friends, read tons of books, watched some really good TV shows and spent an amazing time just hanging out with The Professor. He had a lot of time off from teaching and that meant we could have a ton of fun this summer.
We went on numerous hikes with Helo – this is The Professor and Helo splashing through the creek at The Great Sand Dunes National Park. Aren’t they adorable?

Chicken and farro salad
Don’t you just love it when you can see the colors of the ingredients that went into your dish? The deep red of ripe tomatoes, the pop of yellow from grilled corns, the vibrant green of a lettuce, the bright orange of a carrot … food is so beautiful when you pause to appreciate it!

Squash and goat cheese pasta bake
It’s a constant tussle in the kitchen between The Professor and I.
He wants more vegetables in his dishes. I want more meat.
He doesn’t want any butter in his dishes. I could drown in it.
I’m the kind who rapturously digs into a mango mousse while he indulges in that epitome of all desserts – cottage cheese and blueberries. Oooooh!

Lettuce and apple salad with citrus vinaigrette
I am one of those people who type with just their index fingers.
( I am assuming there are other people like me, because I myself have not seen any).
I know, I know, it is terribly uncool and unimaginably un-savvy. But the thing is, we didn’t have type writing lessons in high school, nor had I used the computer very much before I came to the US. The Professor has been on a health kick for a while now and has been requesting meals that I would normally never, ever cook in my kitchen. Now, don’t get me wrong – I like eating healthy too. I always add at least two veggies to every savory thing that I cook (onions and garlic) and I make dessert only once a week (but I make enough to last the whole week).
